Camera sensors have a more limited range in recording light than the human eye and tend to struggle with the range from shots with "dappled" light. Some bits are in bright sunlight while other bits are in shade and the camera just struggles with it. The easiest remedy is to shoot in full shade or full sun. Another option might be to use a fill flash that would brighten the darker areas. In this case, the white of the horses mouth falls in a spot of light so you just got some blown highlights.
