Question Framing subjects

Hello,

I'm a noob photographer - just trying to figure out how to take decent photos of people (candid rather than posed shots). Right now, if I want to get a shot of someone's face, I tend to zoom as much as possible so that their face takes up a large porportion of the photo. But the problem is that in the rush of getting the photo taken or the subject moving slightly, I over-zoom and something important (top of head etc.) gets cut off from the pic.

So, my question is: if I wanted to get a nice candid photo of someone's face, should I be on the safe side and take a wide-angle photo and then crop just the face afterwards, or do I just need to practice not over-zooming. I am only using a P&S camera - would it be easier with a SLR?
