I'm just going to say that the 5D is WAY up there if you are only wanting to shoot the kids!

If you want excellent quality and something that will last you a while (as far as skill), but don't want the cheapest beginner camera, you may want to look into a Canon 40D or 50D. The 40D has been discontinued but you can still probably pick up a new one. It is not something you will outgrow quickly, if anything it still might be too powerful for what you are wanting. I hear great things about the Rebel line (XS, XSI, XTI, T1i etc.) as well.

Plus, keep in mind your brand selection. Pentax won't have as many lens choices as Nikon or Canon.
