Yes, because you camera shooting in black and white (most generally) will shoot with automatic settings.
If you think of all the possibilities that the camera must face to compose a B&W shot from anyone who buys it, it has to please a broad and general audience.
I would say shoot in colour (if you have time) (some times 'vivid' if you have it) and then go into a post production processing software such as photoshop (being it is one of the most common).
I can think of around 5-6 DIFFERENT ways to change a coloured picture into a Black and White. Hit up ol' google and search some tutorials.
Why I say use software to do it for you, is because there are more then one ways to do it, and its more customizable. Often when taking pictures you might not get enough time to change to B&W setting. So when you are in PS. you can take your time, perfecting it to the way you enjoy it most. And also create a PROPER Selective Colour Image
