The software is not reading your camera settings. This is assuming you set your camera to B&W. I don't know anything about this specific software but when you shoot in RAW format,
all the information is there no matter what your camera settings were. You just have to figure out a way to set the software to read them or make the adjustments manually. PSE 7 has a newer version of Camera RAW. You can find it here & maybe it will help you with PSE 7.
