Unhappy My Little Earth

I'm having some problems still with my 360 degree panoramic. I used a canon xsi, manual mode. But for some reason, the EV still changes based on the metering. Should I be using spot/center weighted/partial/evaluative metering? I used the AE lock, but a couple of pictures still came out exposed for the sky versus the foreground.

Here's my example:
I used a tripod, manual settings, and AE lock but a couple shots still came out different from the rest. Any tips? should I wait until there are no clouds? Overexpose the sky??...
