I'm not a big fan of increasing prices the further you get away from the shoot date. I usually see that it should be the other way around, but on a more long term scale. Yes, time limit is a good thing, but some people respond negatively to that time of marketing. If you are going to do it, use coupons. You don't discount the whole thing, but you might chuck in a free print with an order of yada, yada, yada... This seems less threatening, and gives them that deadline.
Once again, I am a big believer in charging upfront for the shoot and even the package. The best commitment you can do is for them to have already paid.
