Try telling them a very vague pose that you would like... then start snapping away as they are trying to figure out what you meant. Ex: tell them you want to take a picture or two of them with/on a bench... but don't tell them anything else, let them try to figure out the best way to pose... take pictures of them discussing what they want to do. Try and be casual about it so they don't panic when you start taking pictures, let them know you are just checking exposure or white balance or something. Candid shots can be pure gold!!
Make sure you have some set poses too so that you are sure you get some that are set up well... don't rely only on candid.
