Default HDR in RAW

If you are shooting RAW, do you have to take three different pictures at 3 different exposure? Or could you just change them in PS? Is there a difference between shooting them at different exposures and just changing them in PS?

That depends. If you desire to increase dynamic range (HDR) you will need different actual exposures. If you are looking for tone mapping enhancement one exposure and post processing exposure adjustment will often do well.

Note when you adjust exposure in post processing you cannot get additional detail in the highlights and shadows as you do with actual different exposures. This increased detail is what gives you higher dynamic range.
