The way it was explained to me was that the professional standard for printing images is 300 pixels/inch but you can drop to approx. 240 pixels/inch without a noticable degredation in image quality. Photoshop (and many others) defaults to 72 pixels/inch which is great for viewing on a computer or the internet where bandwidth or storage space can be an issue.
I resize my images in photoshop and save them to a print folder - I like to keep the original un-edited image elsewhere. Image > Image size (Alt+Ctrl+I) Ensure that resample image is unticked. Under the document size section change the resolution to 300 or 240. Depending the size and quality of the original image it will then tell you the size of the image that will be produced. On a DSLR this will hopefully be bigger than 10 x 8. Your clients should then be able to print high quality images upto that size - they will lose some quality above that size. Its very subjective though, I use a 7.2Mp compact camera and can print nice images at 150 pixels/inch to provide 10 x 8 's, they look slightly blury but often not too noticable.
