You don't have to be a rocket scientist to get the right white balance on a wedding dress.

Depends on the lighting. Satin can be quite difficult to color balance correctly, especially if it's off-white rather than true white. If there are brightly colored (and differently colored) things in the vicinity of the subject, the reflections from the fabric can be quite noticeable.

Many times when I've corrected things that have been incredibly off in color temperature with almost no reference points, I've gotten very close to the true white balance by making adjustments in the RGB curves. When you have a white balance that is incredibly off color-temperature-wise you'll see big gaps in the histograms for the RGB channels. If you can even those out things will start looking normal again, and your subjects won't look so much like Oompa Loompas.

I've resorted to this approach a few times with JPEGs and the curves tool was the best tool in my arsenal to attack it with. When I'm dealing with a RAW file, using the color temperature presets is often close enough to the actual recorded light that no one can tell the difference.
