hi there,
i want to ask about the program using by the the photographer during the shoot session , they plug the camera in the laptops and let the person stand on a white back ground but the laptop shows another beautiful background chosen previously

You are looking for "digital backgrounds". Usually you use a green screen background because the green is not usually found on your subject. Any color can be used, white for example, but the subject can't be wearing anything white. Google should help you find plenty of vendors where you can buy and download digital backgrounds.
