this was a "nothing" pic I took while in Cancun, so I thought I'd use it to play around with textures and blending.

I cropped, added a border, added an old paper texture, and used paper toner filter in nik effex

Does it look plausible as a vintage photo, or just too overly processed?

Yes, the first shot was a bit of a nothing shot - too much water and nothing much in focus. But I think you've done a good job with the PP, the texture hides the lack of sharpness and the crop has given a better composition. I'm not expert but looks good to me
