Anyone have one? Should I buy one? Can it process photos like you would expect a mac to?
Im looking at the fully loaded model
* 1.83Ghz Intel Core Duo
* 512MB memory / will prob upgrade to 1G
* 80GB hard drive

I don't have a Mac Mini, but I do have a PowerBook G4. Considering the specs of my PowerBook are lower than those of the Mac Mini, I wouldn't see any reason why it wouldn't process photos like you'd expect that a Mac would. I love the way that my Mac handles photo processing (much better than my PC) and I do all my photography on my Mac.
With the specs you're looking at, especially if you upgrade to 1GB of RAM, you will find you have the minimum system reqs for Aperture or Adobe's Lightroom software (Lightroom is still a free beta), and you shouldn't have any problems running other Photoshop programs.
