What is the best way to capture subjects in fluorescent lighting without making them blue, especially if the light is behind them?

Use your flash to illuminate your subject. Depending on your camera, you might also want to change the metering mode (spot, center-weighted, evaluative, etc). Also, if your picture is still turning out blue, change the white balance setting to fluorescent if it has it (or another mode if necessary).

I would make this the first step for taking pictures with florescent lights. White balance changes should help significantly.
