I'm always in manual mode, as for White Balance setting (the later I can adjust in post-processing).
The drawback of this is that I sometimes happen to shoot in bright daylight with a 1600ISO setting I've forgotten to reset and wonder why I still have overexposed shots at 1/8000s f/8
