I'm not sure what software you use for your post-processing, but those "instructions" would be for Photoshop CS3, or any version of Photoshop really.
There may be a better or more efficient way of doing it, but that is where I would at least start. If someone has some other advice, hopefully they'll share it.
EDIT: I just saw your last edit - the monochrome photo with the blue eyes. I think if you're going to go that route, then you should lighten the eyes to really make them pop; they're too dark as they stand right now, in my opinion. Also, I like your original crop more than the tighter one. Just my two cents.
