Juding by yoru requirements you need to look for the most of everything you can afford. Key things will be:
Screen quality: Most laptops have crappy screens which make photo aplications a ball ache
Lots of RAM: Will make multiple applications run faster
Large hard drive: for stoing all of your photos and video etc
Good battery life:
As for Windows XP compatability you have a few options. Windows 7 (the premium version I think) contains a windows XP emulator for running XP programes. You can also run Windows on a Mac but I don't know the details of that.
