HDR is High Dynamic Range... It's a process where you merge two or more photo's to take the highlights and lowlights from each picture and combine them into one image.
If you take a pic in daylight with a fast shutter speed, you will get nice detail on shrubs and greenery but the sky will be very light, almost white. So you take another one from the same position with different settings (longer exposure and smaller aperture) to capture the detail in the skies this time instead of the greens (which will now be blown out), combine them to get a HDR image
