If you're planning on actually enjoying the park, you'll be spending a lot of time standing in lines. Not much photo opportunity there.
It's your call, really. How many shots an hour do you really expect to be taking? And how many hours a day do you expect to be in photogenic spots that are different from before?
Two things to keep in mind:
1) Memory is dirt cheap, especially compared with what 10 days at Disney costs for an entire family, so stocking up isn't a big deal.
2) On the other hand, they sell memory cards at Disney. And in the surrounding areas, too (you didn't say
which Disney, so I'm having to be vague). If you start running short, you can always buy more memory cards. It's not like you're going on safari into darkest Africa.
