My tip for doing a photoshoot for shy kids:

Get an early start (if they come to you, have them come a bit early, if you go to them, get there a bit early). Bring an inexpensive P&S, if possible (I have a brand new one for my own use, but I use my old one for this purpose). Get right down on the kid's level and have a little chat, first, and try to get them to laugh, if possible, to break the ice. Show the kids your camera and say you love to take pictures and are so excited to take their picture. Then take out the P&S and ask them if they'd like to take some pictures of you, their parents, whatever. I've found this really helps with shy kids - it makes them feel grown up and more responsive to you, as the photographer. You can throw in a couple of 4x6 prints of the ones they took as a free little bonus when they order prints.
