Default help please!

Hi all, was hoping someone could give me a few tips on how to shoot with having winter-sun that is low in the sky. I have problems as the sky gets blown out but I dont get much detail on the ground at all in a lot of situations. I will try to put up a couple of shots later of some deer I took today, I was not impressed
